Blackberry & Ginger Glazed Salmon

3 Tbls water

½ the 8.5 oz jar Dorothy's Blackberry Jelly

1 tsp fresh grated ginger

1 Tbls Lemon juice

4 - 6 skinless salmon fillets 

Pre-heat oven to 400 degrees F. 

In a small saucepot over medium-high heat, combine water, blackberry jelly, ginger and lemon juice.

Bring to a boil, reduce heat and simmer to reduce by half.

Remove from heat. (if it thickens up before using re-heat) 

Place Salmon on oiled baking sheet, brush with olive oil then brush on sauce.

Bake for 4 minutes. Brush with sauce again,

Change oven to BROIL and return the Salmon for 3-5 minutes until salmon flakes.

Season with Salt & Pepper

Glaze with sauce before serving.
