Start your morning with a warm Dorothy's Huckleberry Jam Filled Muffin each one with huckleberry jam baked right in the middle. (Makes approx. 12)
CONTAINS: WHEAT
Contains: MIX: Flour, sugar, brown sugar, Baking Powder, Salt, Natural Vanilla bean, powder, baking soda.
JAM: Sugar, huckleberries, pectin, citric acid.
Directions:
Pre-Heat Oven to 350 Degrees Set aside the jar of jam. Spray or line a muffin tin (10-12)
Combine: 2/3 Cup sour cream, 1/3 Cup melted butter, 1 egg, 2 TBLs Water - Whisk together...
ADD: To the Dry Mix and fold in until just mixed - do not over mix.
USE 2/3 of the batter and divide evenly to partially fill the muffin cups. Spoon a small amount of the JAM into the center of each muffin cup.
Use the remaining the Batter to cover the jam.
BAKE FOR 16 to 18 MINUTES - check for doneness with toothpick. Cool before serving.

Huckleberry Jam Filled Muffin Mix
These muffins are very moist, probably due to the addition of sour cream. Have a good flavor. I made them as directed. The jam sank to the bottoms of the muffins during baking. Not sure if this is normal but it didn't affect the taste.
