Huckleberry and Lemon Curd Crepes

For the batter:

1 Cup Homemade by Dorothy

Sawtooth Sourdough Pancake Mix

1 ¼ Cup of milk (whole, skim, almond, or oat)

2 Tablespoon of melted butter (or vegetable oil)

1 Teaspoon of vanilla extract

¼ - ½ Cup of water (to water down the mixture as needed)

2 Large eggs

For the finish:

1 Jar of Homemade by Dorothy Huckleberry Jam

1 Jar of Homemade by Dorothy Lemon Curd for filling

Powdered sugar for dusting

Whipped cream for filling and/or topping

Instructions:

1. In a medium sized mixing bowl, combine the wet ingredients (milk, eggs, melted butter, and vanilla). Break egg yolks and whisk until everything is fully combined.

2. In a small separate bowl, sift pancake mix to remove any clumps and then add to wet ingredients. Whisk everything together until all lumps are gone. Batter should be very liquidy, if too thick, add ¼ cup of warm water.

3. Preheat a 12in crepe pan or a 12in pan on the stove top over medium heat. Once hot, spray with non-stick cooking spray or spread a small dollop of butter over the surface of the pan.

4. Pour roughly ½ cup batter into the center of the pan. Quickly tilt the pan, spreading the batter evenly on the surface in a circle. (For best results, cover entire bottom of pan in a very thin coat of batter, you may need to add batter for this).

5. Cook crepe for 1-2 minutes, until the edges start to lift and/or pull away from the edge of the pan. Use a thin spatula to gently lift the edge and check for a toasted golden color. Carefully flip and cook until golden brown.

6. Transfer cooked crepe to a plate and repeat steps 1-5 with the remaining batter. Stack cooked crepes atop one another to keep them warm.

7. To serve, apply a layer of lemon curd and a strip of whipped cream to the center of the crepe and roll. Top with huckleberry jam and a sprinkle of powdered sugar and enjoy!
