For our IDAHO Huckleberry infused Balsamic Vinegar we add Wild Idaho Mountain Huckleberries to Balsamic Vinegar from Modena Italy and let the berries infuse the vinegar with flavor. After 90 days we remove the huckleberries and bottle the vinegar.  This is an  "All Natural" no added sugar vinegar. Use it to make a dressing, sprinkle over steamed vegetables or to marinade your meats. 

 

How to make Balsamic Reduction Sauce (Yields ¼ cup)

Pour ½ Cup Huckleberry Balsamic Vinegar (1/2 the bottle) into a small saucepan over high heat add 2 TBLS sugar, then bring to a boil. Turn the heat down to medium then simmer until the vinegar has reached a thin maple syrup consistency. It will continue to thicken as it cools. Watch closely this will happen quickly. Yields about ¼ cup.

To confirm it is done scrape a spatula down the center of the pan. If the sauce stays apart so you can see the bottom all the way across for a couple seconds it is done!

Pour the balsamic reduction into a small serving bowl then set aside if you are going to use immediately. Or pour into a clean container with a good lid and refrigerate for up to 3 weeks.
